HTOD: Clean Eating French Toast Recipe (Gluten Free!!)!

Hello!  Today I made a healthy and clean French Toast recipe that was DELICIOUS, easy to make, and guilt-free!  Here’s the recipe (one serving):

Ingredients:

2 slices Ezekiel (or other gluten-free) cinnamon raisin bread
2 egg whites
2 tbsp unsweetened almond milk
few dashes pumpkin pie spice
few dashes cinnamon
1 dash vanilla extract
1 dash almond extract
1/2 banana cut into slices
agave nectar (optional)

Directions:

Whisk egg whites, almond milk, pumpkin pie spice, cinnamon, vanilla and almond extract in a bowl.  Dip the slices of cinnamon-raisin bread in the egg white mixture (both sides!) and place in a preheated frying pan on medium heat (you can use coconut oil or cooking spray on the pan to keep it from sticking).  Cook about 2 minutes and flip the bread over to the other side.  Place the banana slices in the pan around the bread while it cooks to get them all seared and toasty.  Serve the French Toast with a drizzle of agave nectar if desired, or use maple syrup or your favorite syrup.  Enjoy!
